Look at this glam invite we received for dinner tonight from the one and only
Miss Mathabathe.T is an amazing chef - she's the type whose soul is nourished through the very acting of creating food that makes you smile from the taste (and hungry from the memory a few days later!). As such, I feel quite honoured to be helping out with the dessert.
We have decide upon a tried and tested recipe that embraces seasonal fruit, and leaves little room for error: poached nectarines with vanilla bean ice-cream. Looks fancy. Tastes yum. And is really easy to make.

Ingredients:
- One nectarine per person
- 120g sugar
- 3 cups water
- vanilla bean ice-cream (the
Extremely Creamy Madagascan vanilla ice-cream from Woolies is delish)
- a bunch of fresh mint
- black pepper
Place the sugar and three cups of water into a pot. Bring to a boil. Add nectarines and cover with a lid. Allow to boil until skins are starting to come off. There is no exact time and it doesn't really matter if it is a little longer or a little shorter. I like to put them in during mains and by dessert they are usually ready. Once ready, remove nectarines from liquid, peel, and place in a bowl (one per bowl per person). Add a scoop of ice ice-cream, a sprig of mint and crack some black pepper over the top.
